Nadmierne połowy, kłusownictwo i niszczenie środowiska doprowadziły niemal do wymarcia populacji jesiotra. Obecnie najwięcej kawioru produkują Stany Zjednoczone- roczna produkcja kawioru w fermach z jesiotra białego przekracza 4500 kg.
